Cream of Asparagus and Avocado Soup

Fresh asparagus, ripe avocado, coconut water, raw cashews, fresh dill, fresh lemon juice, tamari, garlic, and black pepper are added to blender and processed until smooth. Soup is garnished with fresh corn kernels and served cold.

Ingredients -
1 Bunch Raw Asparagus, trimmed and chopped
1 Large Ripe Avocado, removed from peel, seed discarded
1 (14 ounces) bottle Coconut Water
1 cup Raw Cashews
1/4 cup Fresh Dill
Juice of 1 Fresh Lemon
1 teaspoon Tamari
2 Garlic Cloves, peeled
1/2 teaspoon Black Pepper
Corn from 1 Fresh Ear of Corn
 
Preparation:

1. Add the first 9 ingredients to a blender and blend until smooth.

2. Garnish with corn kernels and serve.

Asparagus

Asparagus shoots or spears are sold in bunches at supermarkets and specialty produce stores year-round, but enjoy a peak season during the late spring and early summer. While most asparagus is green, white asparagus can be found occasionally. The highly nutritious, fresh spears can be cooked a number of ways including boiling, steaming, microwaving, sautéing, roasting, broiling, and grilling.

Coconut Water

The liquid found inside young or immature coconuts, coconut water is high in electrolytes, and potassium. Coconut water is naturally low in carbohydrates, fat free and fairly low sugar content.
