16 Bean Soup

Heart soup features 16 bean soup mix, bay leaves, crushed oregano, chicken stock, water, chopped celery stalks, diced carrot, chopped onion, sliced garlic, sliced Italian sausage, and tomatoes.

Ingredients -

1 package 16-Bean Soup Mix
3 Bay Leaves
1 tablespoon Oregano, crushed
2 cans Chicken Stock
Additional Water to cover beans
3 Celery Stalks, chopped
3 Carrots, diced
1 Large Onion, chopped
3 Garlic Cloves, sliced
1 pound Italian Sausage, sliced
2 cans Stewed or Diced Tomatoes

 
Preparation:

1. Combine the bean soup mix, bay leaves, oregano, stock and water to a large crock pot.

2. The water should cover the mixture by 1-1/2 inches.

3. Cover and cook for 2 hours on high.

4. Add the celery, carrots, onion, garlic, Italian sausage and tomatoes.

5. Turn the crock pot to low and cook for another 3 hours.

6. Serve with rice or as a side dish for meat.

 


Soup Making Tips -
Selecting Onions
When selecting dry onions in the store, look for those that are heavy in relation to their size. They should be firm and dry with crackly skins. Dark or soft spots are a sign of molding and rotting, and green patches can alter the taste. Sprouts are a sign of aging and rotting, as is a strong odor. Only sproutless onions with a weak fragrance should be picked.

16 Bean Soup Mix
