1. Combine the bean soup mix, bay leaves, oregano, stock and water to a large crock pot.
2. The water should cover the mixture by 1-1/2 inches.
3. Cover and cook for 2 hours on high.
4. Add the celery, carrots, onion, garlic, Italian sausage and tomatoes.
5. Turn the crock pot to low and cook for another 3 hours.
6. Serve with rice or as a side dish for meat.
