Cannellini Bean Soup with Tomato, Onion and Celery

Soup prepared from chopped onion and chopped celery sautéed in extra-virgin olive oil combined with chopped vine-ripened tomato, sea salt, vegetable broth, and sliced garlic. Soup is simmered over low heat for 20 minutes. Chopped fresh parsley is stirred in during final minutes. Individual servings may be garnished with sprinkling of Parmesan cheese.

Ingredients -

2 tablespoons Extra-Virgin Olive Oil
1 medium Onion, chopped
2 Celery Stalks, chopped
4 Vine-Ripened Tomatoes (fresh or canned), cut in small chunks
1 teaspoon Sea Salt
6 cups Vegetable Broth
3 (15 ounces each) cans Cannellini Beans, rinsed and drained
2 Garlic Cloves, sliced
1/4 cup Fresh Parsley, chopped

 
Preparation:

1. Heat the olive oil in a large pot.

2. Add the celery and onion and sauté until soft, which takes about 5 minutes.

3. Add the sea salt and tomatoes and sauté for another 3 minutes.

4. Add the beans, broth, and garlic and bring the mixture to a boil.

5. Reduce the heat to low.

6. Simmer for 15 minutes.

7. Add the parsley and simmer for an additional 5 minutes.

8. Serve garnished with a sprinkling of Parmesan cheese.

 


Soup Making Tips -
Basic Mirepoix
The standard mirepoix combines two parts onion to one part each of carrots and celery. When using mirepoix in a white stock, remove the carrots and substitute mushrooms, parsnips or both to keep the color neutral. White mirepoix is not heated ahead but added directly to the pot in a quantity of one pound of white mirepoix for each five quarts of cold water.

Aromatic Vegetables in Mirepoix
Aromatics used in mirepoix are generally cut into ½ inch pieces to intensify flavor. Since brown stock simmers longer than white stock, the vegetables being used in brown stock can be cut as large as one to two inches wide. It takes a pound of mirepoix to flavor six quarts of cold water, and roasting the mirepoix before adding it to the liquid will further enhance the taste.
