Cranberry Bean Soup

Soup features cranberry beans, whole dried peas, ham, bay leaves, chopped onion, water, chopped potato, chopped carrot, chopped leek, and minced garlic. Individual servings are garnished with Parmesan cheese.

Ingredients -

2 cups Dry Cranberry Beans
1 cup Whole Dry Peas
1 Meaty Ham Bone
2 Bay Leaves
1/2 cup chopped Onion
3 quarts Water (less if beans are not drained)
5 Potatoes, peeled and chopped
2 Carrots, peeled and chopped
4 Leeks, white parts only, chopped, or 3 onions, peeled and chopped
3 Garlic Cloves, minced
grated Parmesan Cheese

 
Preparation:

1. Add the beans to a pot or bowl and cover with water.

2. Allow to soak overnight.

3. Place the soaked beans in a soup kettle and add the whole dry peas, ham bone, bay leaves and onion.

4. Add enough water to make approximately 3 quarts.

5. Bring the mixture to a boil.

6. Reduce the heat and cover.

7. Simmer until the beans and peas are tender, which takes about 2 hours.

8. Remove the ham bone from the pot.

9. Chop the meat into small pieces and throw the bone away.

10. Return the chopped meat to the pot.

11. Add the vegetables and garlic.

12. Simmer for 30 minutes, partially covered, or until the vegetables are tender.

13. Serve garnished with grated parmesan cheese.

 


Soup Making Tips -
Kitchen Safety

When working in the kitchen safety always comes first. Make sure that when you plan on using a knife and a cutting board you make sure that your cutting board is secure so that it does not slip when cutting meats or vegetables. Wet a kitchen cloth and wring dry. Place the cutting board on top of the damp kitchen towel to prevent the board from sliding around.
