Pork, Sweet Potato, and Mung Bean Soup

Country style pork ribs are added to large stockpot along with chicken stock, water, sliced leek, garlic cloves, fresh ginger, fish sauce and soy sauce. Ribs are simmered over low heat to cook meat through and tenderize. Meanwhile mung beans are brought to a boil and then simmered to soften along with diced sweet potato. Beans and sweet potato are added to stockpot along with lemon juice and fresh spinach. Soup is simmered until spinach has wilted. Individual servings are seasoned with salt and pepper.

Ingredients -

2 pounds Country Style Pork Ribs, rinsed clean
4 cups Chicken Stock
6 cups Water
1 Leek, washed and split in half
1-inch piece Fresh Ginger, peeled
2 Garlic Cloves, peeled
1 tablespoon Fish Sauce
1 tablespoon Soy Sauce
1 cup Mung Beans
2 cups Sweet Potato, peeled and diced into bite size pieces
5 cups Fresh Spinach, washed
juice of 1 Fresh Lemon
Salt and Pepper

 
Preparation:

1. Place the ribs, chicken stock, water, leek, garlic, ginger, fish sauce and soy sauce in a large stockpot over medium-high heat.

2. Bring the mixture to a boil then reduce the heat to a simmer.

3. Simmer for 1 hour or until the rib meat is tender.

4. While the meat is simmering, place the beans in a small bowl of water to remove any dirt or pebbles.

5. Place the beans and 7 cups of water in a medium pot over medium-high heat.

6. Bring the beans to a boil, and boil until soft, which takes about 40 minutes.

7. Add the sweet potato and boil until soft.

8. Drain the pot into a colander.

9. Add the sweet potato and beans to the pot with the meat.

10. Add the lemon juice and spinach and cover until wilted.

11. Season to taste with salt and pepper.

12. Serve with steamed rice.

 


Soup Making Tips -
Selecting Garlic
When selecting garlic, look for a bulb that is completely dry and has a sufficient amount of papery skins to protect the cloves. The cloves should be plump and firm, not crumbly, shriveled or spongy. Green shoots are a sign of garlic beyond its prime and should be left at the store.
