1. Cook the bacon until crisp in a large saucepan.
2. Remove the bacon to paper towels and drain.
3. Reserve 2 tablespoons of the bacon grease.
4. Sauté the onions and a pinch of salt, in the pan, until translucent.
5. Add the garlic to the onions and sauté for 2 minutes.
6. Add 1 tablespoon reserved bacon grease and the remaining ingredients and bring to a simmer.
7. Cook for 20 minutes, stirring occasionally.
8. To thicken the soup, mash some black beans with a potato masher into the soup.
9. After mashing the beans, simmer for another 20 minutes, or until the desired texture is achieved.
10. Taste and adjust the seasoning. Serve hot with the remaining bacon over the top as a garnish.
