Black Bean Soup with Ham

 

Ingredients -

2 cups Dry Black Beans
1 Ham Bone
6 cups Water
4 cups Chicken Broth
1 tablespoon Salt
2 tablespoons Vegetable Oil
1/2 Onion, chopped
1 Tomato, diced
1/2 cup chopped Ham
1 tablespoon Distilled White Vinegar

 
Preparation:

1. Simmer the first 5 ingredients in a large soup pot for 1-1/2 hours.

2. Remove and throw away the bone.

3. Divide the soup in half, and puree half of the mixture.

4. Pour the puree back into the soup pot.

5. Sauté the onion, tomato and ham in a medium skillet until the onion is soft.

6. Add the vinegar and stir to combine.

7. Pour the ham mixture into the soup pot.

8. Simmer for 20 minutes.

9. Serve.

Peeling Tomatoes

To peel a tomato, immerse in boiling water for 10 to 45 seconds. When the skin starts to peel back when you nick them with a sharp knife, lift out, let cool a few minutes, then peel off and discard the tomato skin and use as needed.
