Hearty Black Bean Soup

 

Ingredients -

1 Medium Onion, chopped
2 Garlic Cloves, minced
1 tablespoon Canola Oil
2 cups Chicken Broth, divided
45 ounces Black Beans, rinsed and drained, divided
1 (10 ounces) Diced Tomatoes with Green Chiles, un-drained
1 teaspoon Ground Cumin
1/2 teaspoon Garlic Salt
minced Cilantro for garnish

 
Preparation:

1. Cook the onion, garlic and oil in a large saucepan for 3 minutes.

2. Add 1/2 cup broth and 15 ounces of black beans to a food processor and puree.

3. Add the puree to the saucepan and stir in the remaining ingredients.

4. Bring the mixture to a boil, reduce heat, cover and simmer for 10 minutes.

5. Serve garnished with fresh cilantro.
