Mexicali Pork Soup

 

Ingredients -

1-1/2 pounds Ground Pork
1 cup chopped Onion
2 (15 ounces) cans Black Beans, drained and rinsed
1 (15 ounces) can Whole Kernel Corn, undrained
1 (14-1/2 ounces) can Diced Tomatoes, undrained
2 (4-1/2 ounces each) cans chopped Green Chilies
1 (14-1/2 ounces) can Beef Broth
1 teaspoon Ground Cumin
1 teaspoon Chili Powder
1 tablespoon chopped Fresh Cilantro

 
Preparation:

1. In a large saucepan, add the pork and onions and cook over medium-high heat until done.

2. Add the remaining ingredients and bring the mixture to a boil.

3. Cover, reduce the heat to medium-low and simmer for 15 minutes.
