Broccoli and Cheese Soup

 

Ingredients -

1 cup chopped White Onion
2 Garlic Cloves, minced
3 cups Fat-Free, Reduced-Sodium Chicken Broth
1 (16 ounces) package Broccoli Florets
2-1/2 cups 2% Reduced-Fat Milk
1/3 cup All-Purpose Flour
1/4 teaspoon Fresh Ground Black Pepper
8 ounces Velveeta Cheese, cubed

 
Preparation:

1. Spray a large skillet with non-stick cooking spray.

2. Heat over medium-high heat.

3. Add the garlic and onion and sauté until tender, which takes about 3 minutes.

4. Add the broccoli and chicken broth and bring to a boil.

5. Reduce the heat to medium and cook for an additional 10 minutes.

6. In a small bowl combine the flour and milk and whisk until smooth.

7. Add the flour mixture to the broccoli mixture.

8. Cook for 5 minutes or until the mixture thickens slightly, constantly stirring.

9. Add the pepper and stir to combine.

10. Remove the pan from the heat.

11. Add the chees e and stir until the cheese melts.

12. Puree in a blender 1/3 of the soup mixture then return to the pot and heat through.

Storing Broccoli

Fresh broccoli heads should be stored loosely in plastic bags in the produce section of your refrigerator. Do not rinse broccoli before storing and avoid excess moisture in the storage bag, as water will facilitate faster spoilage.

Cooking Broccoli
The strong odor of broccoli is caused by a chemical compound of hydrogen sulfide and ammonia that is released as the broccoli cooks. Cooking broccoli for a shorter amount of time, such as with steaming or microwaving, reduces the compound output and therefore the smell.
