Broccoli Cheese Soup with Cheddar and Onion

 

Ingredients -

1 large bunch Broccoli, chopped
2 tablespoons Butter
2 Shallots or 1 small Onion, minced
1 Garlic Clove, minced
1 tablespoon Flour
4 cups Chicken Stock
2 cups Shredded Sharp Cheddar Cheese
1/4 cup Sliced Black Olives
Salt and Fresh Ground Black Pepper (optional)

 
Preparation:

1. Steam the broccoli until fork tender.

2. In a large soup pot, melt the butter while the broccoli is cooking.

3. Add the garlic and shallots to the pot and sauté until tender.

4. Sprinkle the flour over the top and stir over low heat until the flour blends in.

5. Add the chicken stock and stir until smooth.

6. Add the steamed broccoli and olives and slowly heat.

7. Season, to taste, with salt and pepper.

Ingredients used for stock should be removed and discarded and not used in the finished product. The simmering process that stock undergoes depletes vegetables and meats. Pass stock through cheesecloth to separate the broth from the excess ingredients and add fresh vegetables and meat for the best texture and flavor.

Broccoli is delicious served raw, so the need to fully cook is not necessary. Overcooking can lead to a mushy final product while undercooking will leave the vegetable with a bit of crunch. Steaming is a popular method for preparing broccoli as it leaves the majority of nutrients intact.
