Broccoli Cheese Soup with Potatoes

 

Ingredients -

2 cups Frozen Loose-Pack Chopped Broccoli, divided
1/2 cup Chicken Broth
1-1/2 cups Milk
1 (11 ounces) can Cheddar Cheese Soup
1/2 cup Frozen Loose-Pack Hash Brown Potatoes

 
Preparation:

1. Add the broth and broccoli to a saucepan and cook until tender.

2. Drain.

3. Transfer the broccoli to a food processor and pulse until finely chopped.

4. Set aside.

5. In another medium saucepan, combine the milk and soup and cook over medium heat until bubbling.

6. Remove the pan from the heat.

7. Add the broccoli to the pan, along with the frozen broccoli and hash brown potatoes.

8. Heat to hot.

9. Serve.

Calabrese broccoli gets its name from Calabria in Italy, the region it is believed to have originated from. It has green florets and thick stalks and is the most common type of broccoli found in grocery stores in America. Romanesco broccoli can be found in some grocery stores and in health food stores.
