Broccoli Cream Cheese Soup with Red Onion

 

Ingredients -

1/4 cup chopped Red Onion
1 tablespoon Butter
2-1/2 cups Whole Milk
1 (8 ounces) package Cream Cheese, softened
1 pound Processed Cheese, cubed
1 (10 ounces) package Frozen Chopped Broccoli

 
Preparation:

1. In a 2 quart saucepan, melt the butter over medium heat.

2. Add the onions and cook until tender.

3. Add the milk and cream cheese and stir until the cream cheese is melted.

4. Stir in the frozen broccoli and the cheese cubes and stir until all is melted and the soup is hot.

 


Soup Making Tips -
Red Onion

Red onions are purple or reddish purple in appearance, have a bright dry skin covering a purple colored bulb. The flesh of the onion is white. Red onions are less pungent than yellow or white onions, and their biting, but sweet flavor makes them an excellent choice for use in salads. Red onions are excellent in soups and stews for their color, texture and flavor and make an excellent garnish when diced finely.


Soup Making Tips -
Frozen Chopped Broccoli

Frozen chopped broccoli is excellent for soups as the stems and florets have been cut into similar size pieces and the ability to keep a bag in the freezer until needed is a nice convenience. Thaw frozen broccoli overnight in the refrigerator, if possible.
