Fresh Broccoli and Celery Soup

 

Ingredients -

4 cups Fresh Broccoli, cut into bite size pieces
1-1/2 quarts Chicken Broth
2 cups Milk
2 cans Cream of Celery Soup
4 tablespoons Cornstarch
1/2 cups Cold Water
2 cups Shredded Cheddar Cheese

 
Preparation:

1. Add the broccoli and chicken broth to a large soup pot and cook until tender, which takes about 10 minutes.

2. Stir together the milk and soup in a medium bowl.

3. In a small bowl, blend together the cornstarch and cold water.

4. Add to the soup mixture and stir to combine.

5. Pour the soup mixture into the pot with the broccoli.

6. Cook the mixture over medium heat until thick and bubbly, stirring constantly.

7. Add the cheese and stir until melts and is hot.

8. Be careful not to boil the soup.

9. Serve.

It takes about eight pounds of bones and meat for every six quarts of water to make a tasty soup stock. For a scrumptious vegetable stock, use equal amounts of vegetable and water. Make sure bones, meat and vegetables are fully submersed in the water to allow for even cooking and full flavor distribution.

Fresh Broccoli
Fresh broccoli should have firm heads with tiny, compact buds that are in tight clusters. The darker the green color, the more nutrients the broccoli contains. Broccoli should have a mild odor as a potent aroma is a sign of age. Wilting, soft spots, rubbery stalks and yellowing florets are also signs of broccoli that has past its prime.
