Gourmet Broccoli Cheese Soup

 

Ingredients -

1 (10 ounces) package Frozen Broccoli
2-1/2 cups Milk
2-1/2 cups cubed Velveeta
1/3 cup Flour
1 cup Heavy Cream
1 cube Chicken Bouillon
1/2 teaspoon Salt
1/2 teaspoon Pepper

 
Preparation:

1. In a medium saucepan, place the broccoli and just enough warm water to cover the broccoli.

2. Cook for 8 minutes or until tender.

3. Set aside and do not drain.

4. Heat the milk in a large saucepan.

5. Blend in the cheese and flour and whisk until smooth.

6. Add the cream and bouillon cube and stir to combine.

7. Add the broccoli and water to the mixture.

8. Season, to taste, with salt and pepper.

9. Heat to hot and serve.

Prepaackaged Frozen Broccoli
Prepackaged frozen broccoli generally contains fewer stalks by weight than fresh broccoli, and as such can contain up to 35% more beta-carotene, which is predominant in the florets. The drawback: frozen broccoli contains two times as much sodium as fresh, 50% less calcium, and fewer quantities of iron, riboflavin, thiamin and vitamin C.
