Broccoli and Wild Rice Soup

 

Ingredients -

1 (6 ounces) package Chicken-Flavored Wild Rice Mix
1 (10 ounces) package Frozen Chopped Broccoli, thawed
2 teaspoons Dried Minced Onion
1 (10 ounces) can Cream of Chicken Soup
1 (8 ounces) package Cream Cheese, cubed

 
Preparation:

1. Mix together the rice, 6 cups of water and the seasoning packet in a large saucepan.

2. Bring the mixture to a boil.

3. Reduce the heat and simmer, covered, for 10 minutes.

4. Add the onion and broccoli and simmer for 5 minutes.

5. Stir in the cream of chicken soup and cream cheese.

6. Cook, constantly stirring, until the cheese melts.

7. Serve.

Broccoli Florets and Stems
Broccoli stems are thicker than florets and take longer to cook. To avoid undercooking the stems or overcooking the florets, remove the stems, cut them into small pieces, and start cooking them a few minutes before adding the florets.
