Cabbage Diet Soup

 

Ingredients -

2 large White or Yellow Onions
2 Green Peppers
Whole Tomatoes, fresh or canned
1 Head of Green Cabbage
6 Celery Stalks
2 quarts Water
2 packets of Onion Soup Mix

 
Preparation:

1. Cut all of the vegetables into 1 inch pieces.

2. Add to a large pot of boiling water, and cook until tender.

3. Season the water with 2 packets of onion soup mix.

Green Cabbage Nutrition

Green cabbage is loaded with vitamin C and vitamin K, and is a good source of dietary fiber. Cabbage is low in calories. Select heads that are firm, and dense, feeling heavy for its size from moisture content. Outer leaves should be shiny, with little damage. Store green cabbage in the refrigerator wrapped in a plastic bag. Cabbage will keep well for a week or two after purchase.

Storing Cabbage

Cabbage should be stored in the refrigerator in a paper bag or loose plastic bag in the crisper drawer. Green and red cabbage will last for about two week, but Savoy cabbage should be used within a week. As the cabbage ages, the vitamin C content decreases and the odor and flavor increases, making it best to use it as soon as possible.
