Cabbage Soup with French Style Green Beans and Mushrooms
Ingredients -
1-1/2 cups Tomato Juice
3 cups shredded Green Cabbage
1 medium Onion, chopped
1 dash of Garlic Salt
1 dash Chili Powder
2 cups Water
1/2 cup diced Celery
1 teaspoon Parsley
1 teaspoon Chicken Bouillon
Salt and Pepper to taste
1 (16 ounces) can French-Style Green Beans
1 (16 ounces) can Sliced Mushrooms
Preparation:
1. In a large soup pot, add all but the last two ingredients and mix well.
2. Cook over medium-high heat until the cabbage is tender.
3. Add the mushrooms and green beans and stir to combine.
4. Heat until hot.
5. Serve.

Green Cabbage
Green cabbage should be firm, moist, and compact. It should feel heavy for its size. The outer leaves of the cabbage will be slightly darker in color than the inner leaves. One or two of the outer leaves may not be suitable for eating
and may need to be discarded. Green cabbage is readily available in supermarkets and farmers markets.
Soup Making Tips -
Vitamin C in Cabbage
Once cabbage is cut it begins to lose vitamin C. That is why it is best not to buy already sliced cabbage or a head that has been split in half. Tightly wrap unused cabbage
in plastic, store in the refrigerator and use within a couple days. Cabbage should not be washed before storing because the excess moisture can cause deterioration and decay.
