Cabbage Varieties
Not all cabbage comes in tight heads. Delicate tasting Savoy cabbage and napa cabbage, also called Chinese cabbage, have large ruffled leaves that are light green in color. Bok choy has long white stalks with large green leaves and a mild flavor. These
three types of cabbage are often used in stir-fries, soups and salads. Along with a milder flavor they also come with a milder odor.

Types of Cabbage
Two of the major types of cabbage are red and green. Red cabbage has crimson or purple colored leaves with white veins and a crunchy texture that is suitable for salads and
cole slaw. Green cabbage is light to dark green in color. It is often served cooked although its crunchy texture is also good in salads and cole slaw.
