French Cabbage Soup

 

Ingredients -

4 cups canned Vegetable Juice
1-1/4 cups Beef Broth
1 package Dry Onion Soup Mix
1 cup sliced Celery
3 cups shredded Green Cabbage
1 cup diced White or Yellow Onion

 
Preparation:

1. Combine the first 3 ingredients into a large saucepan.

2. Bring the mixture to a boil.

3. Add the celery, cabbage and onion.

4. Reduce the heat to low and simmer for 1 hour.

5. Adjust the taste with salt and pepper.

Cabbage Varieties

Not all cabbage comes in tight heads. Delicate tasting Savoy cabbage and napa cabbage, also called Chinese cabbage, have large ruffled leaves that are light green in color. Bok choy has long white stalks with large green leaves and a mild flavor. These three types of cabbage are often used in stir-fries, soups and salads. Along with a milder flavor they also come with a milder odor.

Two of the major types of cabbage are red and green. Red cabbage has crimson or purple colored leaves with white veins and a crunchy texture that is suitable for salads and cole slaw.
