Hearty Beef Soup

 

Ingredients -

4 pounds Boneless Beef Top Sirloin Steak, cut into 1/2 inch cubes
4 cups chopped Onions
1/4 cup Butter
4 quarts Hot Water
4 cups sliced Carrots
4 cups cubed peeled Potatoes
2 cups chopped Green Cabbage
1 cup chopped Celery
1 large Green Pepper, chopped
8 teaspoonsBeef Bouillon Granules
1 tablespoon Seasoned Salt
1 teaspoon Dried Basil
1 teaspoon Pepper
4 Bay Leaves
6 cups Tomato Juice

 
Preparation:

1. Brown the beef, onions and butter in a large soup pot.

2. Drain.

3. Add the vegetables, water and seasonings and bring the mixture to a boil.

4. Reduce the heat, cover and simmer for 20 minutes.

5. Add the juice, cover and continue simmering for an additional 10 minutes or until the vegetables are tender.

6. Discard the bay leaves.

7. Serve and enjoy.

 


Soup Making Tips -
Preparing Cabbage

When preparing cabbage, cut the head and rinse thoroughly under cool running water. If there are signs of insects or worms, soak the cabbage in water with vinegar or salt for 15-20 minutes to get rid of them. Further cut or shred the cabbage and let it rest for 5-10 minutes before cooking or serving to allow the cancer-fighting cells to activate.

Cutting Cabbage

Cabbage reacts negatively to aluminum, copper and carbon steel cutlery and cookware. To avoid black leaves and the loss of vitamin A, vitamin E and folic acid use stainless steel knives and cookware when preparing cabbage. Sprinkling red cabbage with a small amount of vinegar or acidic juice will prevent it from turning a grayish-blue color.
