5 Spice Chicken Noodle Soup

 

Ingredients -

2-1/2 cups Water
1-1/4 cups Low Sodium Chicken Broth
2 Green Onions, thinly bias-sliced
2 teaspoons Low Sodium Soy Sauce
2 Garlic Cloves, minced
1/4 teaspoon Five-Spice Powder
1/8 teaspoon Ground Ginger
2 cups Bok Choy, chopped
1 medium Red Bell Pepper, thinly sliced into strips
2 ounces Somen Noodles, broken into 2-inch lengths, or 2 ounces dried fine noodles
1-1/2 cups Cooked Chicken, chopped

 
Preparation:

1. Combine the water, broth, onions, soy sauce, garlic, five-spice powder and ginger to a large saucepan.

2. Bring the mixture to a boil.

3. Add the bok choy, sweet peppers and noodles and stir to combine.

4. Bring the mixture back to a boil, then reduce the heat.

5. Continue boiling for 3 to 5 minutes, uncovered, or until the noodles are al dente.
