1. In a medium pot, add the onion, celery and carrot and sauté in butter until tender.
2. Add the broth, chicken and seasonings and stir to combine.
3. Bring the mixture to a boil.
4. Reduce the heat.
5. Add the noodles and cook until tender which takes about 10 minutes.
6. Serve sprinkled with parsley.
