Chipotle Chile Chicken Soup

 

Ingredients -
1/4 cup Corn Oil
1/2 pound cubed Boneless, Skinless, Chicken Breast
2 teaspoons Fajita Seasoning
1 cup chopped Onion
1 cup chopped Zucchini
1 quart Chicken Broth
4 teaspoons chopped Garlic
4 teaspoons Chipotle Chiles in Adobo Sauce
1 cup Corn
1 cup chopped Grape Tomatoes
1 cup Vegetable Juice
Lime Wedges
 
Preparation:

1. Add corn oil to stockpot. Stir in chicken breast pieces, fajita seasoning, chopped onion and chopped zucchini.

2. Sauté 5 minutes to brown chicken and soften vegetables.

3. Stir in chicken broth, chopped garlic, chipotle chiles, corn, chopped grape tomatoes, and vegetable juice.

4. Simmer over medium low heat 10 minutes.

5. Serve hot. Garnish with lime wedges.

 


Soup Making Tips -
Thawing Chicken Breasts
Frozen chicken breasts should not be thawed on the countertop at room temperature. Instead, place the frozen chicken on a plate in the refrigerator or thaw in the microwave. Another method is to place the chicken in a bowl of cold water, changing the water every 30 minutes until the chicken is fully thawed. Chicken should be used within 24 hours of thawing.
