Slow Cooked Chicken Tortilla Soup

 

Ingredients -

4 Chicken Breast Halves, cooked, shredded
1 Garlic Clove, minced
2 tablespoons Margarine
2 (14-1/2 ounces each) cans Chicken Broth
2 (14-1/2 ounces each) cans chopped Stewed Tomatoes
1 cup Medium Salsa
1/2 cup chopped Fresh Cilantro
1 tablespoon Ground Cumin
8 ounces Monterey Jack Cheese, cubed
Sour Cream
Tortilla Chips

 
Preparation:

1. In a sauté pan, add the butter and garlic and cook until fragrant.

2. Add the garlic and butter, chicken, broth, tomatoes, salsa, cilantro and cumin to a slow cooker.

3. Cook for 8 to 10 hours on LOW, covered.

4. To serve, place some of the cheese into soup bowls, ladle the soup over the top, sprinkle with chips and a dollop of sour cream.
