Black Bean Chili

 

Ingredients -
1-1/2 pounds Boneless Pork, cut into 1/2-inch cubes
2 (15-½ ounces) cans Black Beans, drained
1 cup chopped Onion
1 cup chopped Yellow Bell Pepper
1 cup Thick and Chunky Salsa
2 cloves Garlic, minced
1 teaspoon Chili Powder
1/2 teaspoon Cumin
1/4 teaspoon Crushed Red Pepper

Garnish:
Sour Cream, Shredded Cheddar Cheese

 
Preparation:

1. Add boneless pork, black beans, onion, yellow bell pepper, salsa, garlic, chili powder, cumin, and crushed red pepper to slow cooker.

2. Cover slow cooker and cook on low 8 hours.

3. Serve in individual bowls and garnish with sour cream and shredded cheddar cheese.

Freezing Soup
If you will be freezing soup immediately, leave out any starches such as pasta, rice or potatoes, as they tend to get mushy. Add them to the thawed soup as you reheat it.

Extra Cheese
