Three Bean Chili

 

Ingredients -
2 tablespoons Olive Oil
2 medium Onions, chopped
1 medium Red Pepper, chopped
1 medium Green Pepper, chopped
1 large Jalapeno Pepper (seeded, de-veined and chopped)
6 Garlic Cloves, minced
1 cup Beer
2 (16 ounces) cans Diced Tomatoes
1 (14 ounces) can Black Beans
1 (16 ounces) can Dark Red Kidney Beans
1 tablespoon Ground Cumin
2 tablespoons Chili Powder
1 tablespoon Hot Pepper Sauce
1 teaspoon Salt
1 can Vegetarian Refried Beans with Chiles
 
Preparation:

1. Add olive oil to stockpot. Heat oil over medium heat.

2. Stir in chopped onion, chopped red pepper, chopped green bell pepper, chopped jalapeno pepper and minced garlic. Sauté until onion is soft.

3. Stir in beer.

4. Stir in diced tomatoes, black beans, dark red kidney beans, ground cumin, chili powder, hot pepper sauce, salt, and refried beans.

5. Reduce heat to low and simmer 15 minutes.

6. Add a splash of cold water to thin, if desired.

Tomatoes
Fresh tomatoes should be rich in color and skins should be smooth. The stem should look healthy and the tomato should smell sweet and delicious.

Bell Peppers
