Alaskan Halibut Chowder

 

Ingredients -
4 ounces diced Bacon
1 large Onion, chopped
6 cups Fish Stock
4 Potatoes, peeled and diced
1 cup diced Celery
1 pound Alaska Halibut, cut into 1-inch cubes
2 tablespoon All-Purpose Flour
1/2 teaspoon Sugar
3 tablespoons Water
2-1/2 cups Light Cream or Half-and-Half
1 teaspoon Salt
1/4 teaspoon Ground White Pepper
chopped Fresh Chives
 
Preparation:

1. Add diced bacon to stockpot.

2. Sauté bacon until lightly browned. Drain off fat.

3. Add onions and sauté until tender.

4. Stir in fish stock, diced potatoes, diced celery.

5. Bring to a gentle boil.

6. Stir in Alaska halibut pieces. Cook 5 minutes.

7. Add all-purpose flour, sugar and water to small bowl. Whisk to combine.

8. Stir flour mixture into stock mixture, and simmer until thickened.

9. Stir in light cream and bring to gentle boil. Simmer 3 minutes.

10. Season with salt and pepper.

11. Garnish with chopped fresh chives.
