Asian Pork Soup

 

Ingredients -
Cooking Spray
12 ounces Lean Boneless Pork, chopped into small bite size pieces
2 cups Shiitake Mushrooms
2 Garlic Cloves
3 ounces Reduced-Sodium Chicken Broth
2 tablespoon Dry Sherry
2 tablespoon Reduced-Sodium Soy Sauce
2 teaspoon Fresh Ginger
1/4 teaspoon Crushed Red Pepper
2 cups Bok Choy or Napa Cabbage
1 Green Onion
 
Preparation:

1. Spray saucepan with non-stick cooking spray.

2. Preheat saucepan over medium heat.

3. Add pork to hot pan. Brown pork 2 to 3 minutes, or until cooked through.

4. Remove from saucepan. Set aside.

5. Stir in shiitake mushrooms and garlic to saucepan.

6. Cook and stir until tender.

7. Stir in reduced chicken broth, dry sherry, soy sauce, fresh ginger, and crushed red pepper.

8. Bring to a boil over medium high heat.

9. Reduce heat to low.

10. Stir in pork, Napa cabbage, and

11. Stir in pork, cabbage, and green onion.

12. Heat through.

Bok choy is a staple in Chinese soups, adding nice flavor, wonderful texture and visual appeal. The delicious cabbage has a peppery flavor. Trim the base off the bottom of the cabbage and enjoy both the white and green leafy parts in your soups.

Storing Green Onions
Green onions and scallions should be stored in the refrigerator to keep them fresh. Wrap the onions in a paper towel and then place them in a plastic bag to keep the odor from spreading to other items in the refrigerator. Store the onions in the crisper drawer for up to five days.
