Mexican Pork And Bean Soup

 

Ingredients -
1/2 pound Lean Ground Pork
1 small White Onion, diced
1 clove Garlic, minced
1 (14-1/2 ounces) can Chicken Broth
1 (14-1/2 ounces) can Mexican-Style Diced Tomatoes
1 (15 ounces) can Pinto Beans, drained
1 teaspoon Chili Powder
1 teaspoon Ground Cumin
1/2 teaspoon Oregano
1/2 teaspoon Salt
1/4 teaspoon Cayenne Pepper
 
Preparation:

1. Brown and crumble the ground pork in a heavy skillet over medium heat.

2. Add the white onion and minced garlic.

3. Cook 3 minutes, or until the onion is translucent.

4. Stir in chicken broth, mexican style tomatoes, pinto beans, chili powder, ground cumin, oregano, salt and cayenne pepper.

5. Bring soup to a boil, reduce heat and simmer 10-15 minutes.
