Quick Asian Chicken Soup

 

Ingredients -
3 cans Chicken Broth
4 ounces Angel Hair Pasta, broken into pieces
2 to 3 cups cooked and shredded Chicken
1/2 pound Snow Peas
2 tablespoons Cider Vinegar
1 tablespoon Soy Sauce
1 tablespoon Sesame Oil
3 to 4 Green Onions, chopped
 
Preparation:

1. Add chicken broth to stockpot. Bring to a boil over medium-high heat.

2. Add angel hair pasta, shredded chicken, snow peas, cider vinegar, soy sauce, and sesame oil to stockpot.

3. Reduce heat to low. Simmer 5 minutes.

4. Serve hot. Garnish with chopped green onions.

Peas
Shelling peas and snow peas should be brightly colored and crisp. Store peas in a loosely wrapped plastic bag in the refrigerator.

Floating Fat
Place an ice cube in cheesecloth and wrap tight. Drag the cheesecloth across the surface of the soup. The cold solidifies the fat in the cheesecloth.
