Green Bean and Meatball Soup

 

Ingredients -

2 tablespoons Olive Oil
1 Onion, coarsely chopped
3 pounds mixed Ground Beef, Pork, and Veal
1 cup Seasoned Italian Breadcrumbs
1/4 cup grated Fresh Parmesan Cheese
1 Sprig Fresh Parsley, stemmed and finely chopped
2 Eggs
3 (28 ounces each) cans Italian Peeled Tomatoes, crushed
2-1/2 cups Chicken Stock
1/2 teaspoon Sea Salt
1/4 teaspoon Crushed Red Pepper
4 pounds Small Red Potatoes, skin on, cut into 1-inchpieces
3 pounds Green Beans, cut into 1-1/2 inch pieces

 
Preparation:

1. Add the oil and onion to a large soup pot and sauté until the onion begins to brown, which takes about 10 minutes, stirring often.

2. Combine the meats with the next 4 ingredients in a large bowl and mix well with your hands.

3. Make 1 inch meat balls from the mixture and set aside.

4. Add the tomatoes and chicken stock to the pot of onions and bring the mixture to a simmer over medium heat.

5. Add the salt, pepper and potatoes and simmer until tender, which takes about 10 minutes.

6. Layer the green beans on top of the potatoes and the meatballs on top of the green beans.

7. Do not stir.

8. Cook the pot for 15 minutes, covered, or until the meatballs are cooked through.

9. Make sure that the meatballs are submerged in the liquid.

10. Simmer for 1 hour, covered.
