1. Add the oil and onion to a large soup pot and sauté until the onion begins to brown, which takes about 10 minutes, stirring often.
2. Combine the meats with the next 4 ingredients in a large bowl and mix well with your hands.
3. Make 1 inch meat balls from the mixture and set aside.
4. Add the tomatoes and chicken stock to the pot of onions and bring the mixture to a simmer over medium heat.
5. Add the salt, pepper and potatoes and simmer until tender, which takes about 10 minutes.
6. Layer the green beans on top of the potatoes and the meatballs on top of the green beans.
7. Do not stir.
8. Cook the pot for 15 minutes, covered, or until the meatballs are cooked through.
9. Make sure that the meatballs are submerged in the liquid.
10. Simmer for 1 hour, covered.
11. Serve immediately.
