Tomato and Bread Soup

 

Ingredients -

1/3 cup Olive Oil
4 Garlic Cloves, crushed
2 Large Onions, finely chopped
6 Medium Tomatoes, peeled, seeded and chopped
4 cups Chicken Broth
1/2 French Bread Loaf, sliced and broken into pieces
1 cup Parmesan Cheese, freshly grated

 
Preparation:

1. Add the oil, garlic and onions to a large heavy saucepan and heat for 1 to 2 minutes over medium heat.

2. Add the tomatoes and cook for 10 minutes, stirring often.

3. Add the chicken broth and bring the mixture to a boil, stirring often.

4. Add the French bread chunks and cook for an additional 2 minutes.

5. Remove the pan from the heat.

6. Serve sprinkled with parmesan cheese.
