Classic Lentil Soup

 

Ingredients -

1 White or Yellow Onion, chopped
1 tablespoon Extra Virgin Olive Oil
2 Carrots, diced
2 Celery Stalks, chopped
2 Garlic Cloves, minced
1 teaspoon Dried Oregano
1 Bay Leaf
1 teaspoon Dried Basil
1 (14.5 ounces) can Crushed Tomatoes
2 cups Dry Lentils
8 cups Water
1/2 cup Spinach, rinsed and thinly sliced
2 tablespoons Vinegar
Salt, to taste
Fresh Ground Black Pepper, to taste

 
Preparation:

1. Add the carrots, onion and celery to a large soup pot with oil and sauté over medium heat until the onions are tender.

2. Add the garlic, bay leaf, oregano and basil and sauté for 2 minutes.

3. Add the next 3 ingredients and bring the mixture to a boil.

4. Lower the heat and simmer for 1 hour.

5. Add the spinach and stir until it wilts.

6. Add the vinegar, salt and pepper.

7. Serve and enjoy.
