Smoked Sausage Soup

Ingredients -

4 1/2 cups Water
1 (28 ounces) can Diced Tomatoes, undrained
1 envelope Onion Soup Mix
1 (9 ounces) package Frozen Cut Green Beans
3 small Carrots, halved and thinly sliced
2 Celery ribs, thinly sliced
1 tablespoons Sugar
1/2 teaspoon Kosher Salt
1/2 teaspoon Dried Oregano
1/8 teaspoon Hot Pepper Sauce (Tabasco)
1 pound Cooked Smoked Sausage, halved and thinly sliced
2 1/2 cups Frozen Shredded Hash Brown Potatoes

 
Preparation:

1. In a large stockpot, combine water, diced tomatoes, onion soup mix, cut green beans, sliced carrots, sliced celery, granulated sugar, kosher salt, dried oregano and hot pepper sauce.

2. Bring to a gentle boil.

3. Reduce heat to low, cover and simmer 25 minutes.

4. Stir in sausage and hash browns.

5. Increase heat to medium high. Bring to a gentle boil,

6. Reduce heat to low, cover and simmer 5 minutes.

Finely minced serrano and jalapeno peppers (seeds included for high heat), can add nice heat to soups.
