1. Sauté the first 5 ingredients in oil ina 3-qt. saucepan for 5minutes.
2. Add the 3 cups water, tomatoes and beef bouillon and bring the mixture to a boil.
3. Lower the heat and cook for 25 minutes, uncovered, or until the vegetables are tender.
4. Add the remaining ingredients and stir well to combine.
5. Serve hot.
