1. Add the first 8 ingredients to a large pot over medium heat and sauté until the onion begins to brown which takes about 6 to 8 minutes stirring constantly.
2. Add the tomatoes and cook for 2 minutes.
3. Add 7 cups of water, potato, cabbage and bean and bring to a boil.
4. Stir well and reduce the heat to low.
5. Cook for 20 minutes or until the vegetables are tender.
6. Season, to taste with salt and pepper.
7. Stir in the garlic and basil.
8. When ready, sprinkle with parmesan cheese and serve.
