Classic Minestrone

 

Ingredients -

2 tablespoons Extra Virgin Olive Oil
1 medium White Onion, chopped
2 medium Carrots, peeled and diced
1 large Celery Stalk, diced
1/4 teaspoon Red Pepper Flakes
1/4 teaspoon Dried Rosemary
Coarse Salt
Fresh Ground Black Pepper
15 ounces Whole Peeled Tomatoes, drained and finely chopped
1 large Baking Potato, peeled and diced
1/4 head Green Cabbage, cored and thinly sliced
1 (15 ounces) Cannellini Beans, rinsed and drained
1/2 pound Green Beans, trimmed and cut into 1-inch lengths
1 Garlic Clove, minced
1/4 cup thinly sliced Fresh Basil
3/4 cup grated Fresh Parmesan Cheese, for serving

 
Preparation:

1. Add the first 8 ingredients to a large pot over medium heat and sauté until the onion begins to brown which takes about 6 to 8 minutes stirring constantly.

2. Add the tomatoes and cook for 2 minutes.

3. Add 7 cups of water, potato, cabbage and bean and bring to a boil.

4. Stir well and reduce the heat to low.

5. Cook for 20 minutes or until the vegetables are tender.

6. Season, to taste with salt and pepper.

7. Stir in the garlic and basil.

8. When ready, sprinkle with parmesan cheese and serve.
