New York Minestrone

 

Ingredients -

1 pound Italian Sausage, sliced into 1/2-inch crosswise pieces
1 tablespoon Salad Oil
1 cup diced Onion
1 Garlic Clove, minced
1 cup sliced Carrots
1 teaspoon Dry Basil
2 small Zucchini, sliced
1 can Tomatoes, chopped
2 (10-3/4 ounces each) cans Beef Bouillon
1 cup coarsely shredded Cabbage
1 teaspoon Salt
1/4 teaspoon Pepper
1 (1 pound) can Great Northern beans, undrained
chopped Fresh Parsley

 
Preparation:

1. Brown the sausage in a Dutch oven with oil.

2. Add the carrots, garlic, onion and basil and sauté for 4 to 5 minutes.

3. Add the remaining ingredients except for the beans and bring the mixture to a boil.

4. Cover, lower the heat and simmer for 1 hour.

5. Add the Great Northern beans and cook for another 20 minutes.

6. Serve garnished with fresh chopped parsley.
