Summer Minestrone

 

Ingredients -

1/4 cup Olive Oil
1 Onion, chopped
3 Garlic Cloves, chopped
2 Celery Stalks, thinly sliced
1 Red Bell Pepper, seeded, thinly sliced
1 Whole Dried Hot Pepper
2 Medium Zucchini, in chunks
1 (28 ounces) can Plum Tomatoes, with juice
1 (19 ounces) can White Beans, rinsed, drained
2 cups Beef, Chicken or Vegetable stock, or water
1 tablespoon Fresh Basil, chopped
1 tablespoon Fresh Thyme, chopped
1 Bay Leaf
Salt and Fresh Ground Black Pepper
1/2 pound Green Beans, trimmed, in 1-inchpieces
Grated Fresh Parmesan Cheese

 
Preparation:

1. Add the oil and onion to a large pot and sauté for 5 minutes over medium heat.

2. Add the celery, garlic, red pepper and hot pepper and cook for 5 additional minutes.

3. Add the zucchini and stir well, cooking for 2 more minutes.

4. Dice the tomatoes and add them to the pot with their juices along with the beans, chicken stock, herbs and seasonings.

5. Simmer for 20 minutes, partially covered.

6. Halfway through cooking, add the green beans and stir well.

7. Remove the bay leaf and hot pepper from the pot and discard.

8. Taste for seasoning and add additional salt and pepper if desired.

9. Serve sprinkled with grated fresh parmesan cheese.
