Winter Minestrone

 

Ingredients -
1 pound Uncooked Italian Sausage Links
2-1/2 cups Butternut or Acorn Squash
2 medium Potatoes, peeled
2 medium Fennel Bulbs, trimmed
1 White Onion, chopped
1 (15 ounces) can Kidney Beans, rinsed, drained
2 teaspoons minced Fresh Garlic
1 teaspoon Italian Seasoning
2 (14 ounces each) cans Chicken Broth
1 cup Dry White Wine
3 to 4 cups Fresh Spinach
 
Preparation:

1. Cut the first 4 ingredients into 1/2-inch pieces.

2. Cook the sausage in a skillet until brown.

3. Drain the excess.

4. Add the spinach, potatoes, fennel, onion, beans, garlic and sausage to a large slow cooker.

5. Top with the chicken broth and wine.

6. Cover and cook for 7 to 9 hours on low.

7. Stir the spinach, and cook for 10 more minutes.
