Cheesy Potato Soup

 

Ingredients -
5 large Potatoes, peeled and diced
1/2 large Onion, chopped
1 tablespoon Butter
4 cups Whole Milk
1 (16 ounces) box Velveeta Cheese, grated
thinly sliced Green Onions
Crumbled Bacon
 
Preparation:

1. Add potatoes and onion to stockpot. Cover with 6-8 cups water.

2. Simmer over medium heat 20 minutes.

3. Stir in butter, whole milk, and ½ box Velveeta cheese.

4. Simmer 5 minutes.

To Serve:
1. Ladle soup into soup bowls.

2. Garnish with thinly sliced green onions, crumbled bacon, and additional grated cheese.

 


Soup Making Tips -
Scallions and Green Onions
Scallions or green onions as they are also referred, make beautiful garnish. Thinly sliced rings can be sprinkled on top of casseroles, meat dishes, soups and stews for added flavor and color. Leaving the bulbs intact, slice the tops of the onions lengthwise in half and place in a bowl of ice water for a few hours. The cut area will begin to curl and form a delightful finishing touch to soups, stews or salads.
