Red Bean and Sausage Soup

 

Ingredients -

3 cups Red Beans
14 cups Water
1 tablespoon Salt
1 cup Brown Rice
1/2 to 1 pound Sausage or Kielbasa, cut up small

 
Preparation:

1. Combine the water, beans and salt in a large stock pot.

2. Bring the mixture to a boil.

3. Reduce the heat and simmer for 2 hours, covered.

4. Add the rice and return the pot to a boil.

5. Simmer for 1 additional hour.

6. Halfway through cooking, begin browning the sausage and add to the soup.

7. Simmer for 15 minutes to blend the flavors.
