Slow Cooker Beef Broccoli Soup

 

Ingredients -
1-1/2 pounds Lean Ground Beef
3 cups chopped Broccoli
2 (4 ounces each) cans Mushroom Pieces
1/2 cup chopped Celery
1 cup sliced Carrots
1/4 cup chopped Green Pepper
1 quart Tomato Juice
1 cup Cold Water
1/2 teaspoon Coarse Salt
1/4 teaspoon Fresh Ground Black Pepper
1/4 teaspoon Dried Thyme
1/4 teaspoon Dried Oregano
 
Preparation:

1. Brown ground beef in large skillet. Drain off excess fat.

2. Add ground beef to slow cooker.

3. Stir in broccoli, mushroom pieces, chopped celery, sliced carrot, chopped green bell pepper, tomato juice, cold water, coarse salt, fresh ground black pepper, dried thyme, and dried oregano.

4. Cover and cook on LOW 8 hours.

Red, yellow, and orange bell peppers are sweeter and more flavorful than green bell peppers.
