Slow Cooker Vegetable Beef Soup with Okra

 

Ingredients -

1 pound Ground Beef
1/4 cup Onion, chopped
1 (14.5 ounces) can Diced Tomatoes, drained
1 (14.5 ounces) can Italian Diced Tomatoes, drained
1 (16 ounces) package Frozen Mixed Vegetables
1 cup Sliced Fresh or Frozen Okra
2 Potatoes, peeled andchopped
1 tablespoon Ketchup
Salt and Pepper to taste

 
Preparation:

1. Cook the onion and ground beef in a skillet over medium heat, until the onion is tender and the beef is no longer pink.

2. Drain the grease and discard.

3. Add the beef mixture to a slow cooker along with the tomatoes, frozen vegetables, potatoes, ketchup, salt and pepper.

4. Add enough water to cover the slow cooker contents.

5. Cover and cook on Low for 4 hours.

 


Soup Making Tips -
Handling Raw Beef
Wash hands before and after handling raw ground beef. Utensils used in preparation should also be washed before they touch any other food. They should not be reused for the cooked meat.
