Taco Soup with Chicken, Pinto Beans and Salsa

 

Ingredients -

1 Onion, diced
1 Garlic Clove, minced
2 cups diced Cooked Chicken
1 tablespoon Vegetable Oil
1 (16 ounces) jar Salsa
1 envelope Taco Seasoning
1 (28 ounces) can Stewed Tomatoes
1 (15 ounces) can Pinto Beans, drained and rinsed
1 (15 ounces) can Cannellini Beans, rinsed and drained
1 cup Frozen Yellow Corn
1-2 cups Chicken Broth
Coarse Salt, to taste
Fresh Ground Black Pepper, to taste

Toppings:
grated cheese, onions, sour cream, tortilla chips

 
Preparation:

1. Add the onion, garlic, chicken and oil to a large sauté pan and sauté until the chicken is cooked throughand the onion is tender.

2. Add the salsa, taco seasoning, tomatoes, beans, corn, broth, salt and pepper and mix well.

3. Simmer until hot.

4. Ladle into soup bowls and serve with the desired toppings.
