Tex Mex Chicken Taco Soup

 

Ingredients -

1/2 cup diced Onions
1/2 cup diced Green Bell Peppers
1 tablespoon minced Garlic
Vegetable Oil
1 pound Chicken Breasts, boiled and shredded
1 package Taco Seasoning Mix
1 (8 ounces) jar Salsa
1 (14 ounces) can Kernel Corn
1 (14 ounces) can Hominy
1 (16 ounces) can Ranch Style Beans
2 (4 ounces each) cans Tomato Paste
2 (14 ounces each) cans Chicken Broth
1 (8 ounces) package Cream Cheese

 
Preparation:

1. Add the onions, green peppers and garlic to a large sauté pan and sauté in vegetable oil until crisp tender.

2. Add the next 8 ingredients, mix well, and simmer for 20 to 25 minutes.

3. Add the cream cheese to a large mixing bowl with 1 cup of the hot liquid from the sauté pan.

4. Mix until it melts slightly and add the mixture back into the sauté pan.

5. Simmer on low for another 10 minutes.

6. Serve with tortilla chips and grated Monterey jack cheese.
