Italian Style Tomato Soup with Ground Beef and Macaroni

 

Ingredients -

Vegetable Cooking Spray
1/2 pound Lean Ground Beef
1/2 cup Onion, Chopped
1/2 cup Green Pepper, Chopped
1/2 teaspoon Dried Basil Leaves, Crushed
1/2 teaspoon Dried Oregano Leaves, Crushed
3 (10-3/4 each) cans Condensed Tomato Soup
3 cans Water
4 cups Cooked Elbow Macaroni, Cooked without Salt
2 teaspoon Lemon Juice

 
Preparation:

1. Spray a 4 quart saucepan with non-stick cooking spray.

2. Heat 1 minute over medium-high heat.

3. Add the beef, onion, green pepper, basil and oregano and cook until the beef is cooked through and the veggies are tender, stirring often.

4. Add the soup, water, noodles and lemon juice and bring to a boil.

5. Reduce the heat to low and cook for 20 minutes, occasionally stirring.

6. Serve garnished with fresh basil.

Thawing Ground Beef
Thawing should not be done at room temperature. Ground beef should be kept cold while defrosting in order to prevent the growth of bacteria. Once it is thawed it should not be refrozen.

Vine-Ripened Tomatoes
Tomatoes that ripen on the vine are the most flavorful and contain the most health benefits. Tomatoes that ripen off the vine will last longer but they have a starchier, mealier texture. Look to farmers markets for the best tasting tomatoes as local farmers have a shorter distance to transport from the garden to the market and generally wait until the tomatoes are vine-ripened before picking them.
