Navy Bean and Tomato Soup

 

Ingredients -

1/2 pound (about 1 cup) Dried White Navy Beans, soaked overnight, then drained well
1 (28 ounces) can Whole Tomatoes
2 Onions, chopped
1/2 pound Salt Pork, cut into small pieces
2 Garlic Cloves, finely chopped
1 teaspoon Dried Thyme
Salt and Pepper to taste
about 4 cups Water

 
Preparation:

1. Place the bean is a large heavy stock pot.

2. Add the remaining ingredients and simmer for 3-1/2 hour or until the navy beans are tender.

3. Season again with salt and pepper, to taste.
