Crockpot Tortilla Soup with Chicken

 

Ingredients -

4 Chicken Breast Halves
2 (15 ounces each) cans Black Beans, undrained
2 (15 ounces each) cans Mexican-Style Stewed Tomatoes
1 cup Medium Salsa
1 (4 ounces) can Chopped Green Chilies
1 (14-1/2 ounces) can Tomato Sauce
Tortilla Chips
2 cups grated Monterrey Jack Cheese
Limes
Sour Cream

 
Preparation:

1. Add the chicken, beans, tomatoes and tomato sauce to a slow cooker and stir well to combine.

2. Cook for 8 hours on LOW, covered.

3. Right before you are ready to serve, remove the chicken and dice.

4. Stir the chicken back into the soup and heat.

5. When serving, layer the sour cream and chips in the bowl and top with a ladle of the soup.

6. Squeeze lime juice on top and sprinkle some cheese.
