Easy Turkey and Rice Soup

 

Ingredients -

4 cups Chicken Broth
1 cup Water
1 teaspoon snipped Fresh Rosemary or 1/4 teaspoon Dried Rosemary, crushed
1/4 teaspoon Pepper
1 (10 ounces) package Frozen Mixed Vegetables (2 cups)
1 cup Quick-Cooking Rice
2 cups chopped Cooked Turkey or Chicken
1 (14-1/2 ounces) can Tomatoes, un-drained and cut up

 
Preparation:

1. Add the first 4 ingredients to a Dutch oven and bring to a boil.

2. Add the frozen vegetables and the quick cooking rice and return the mixture to a boil.

3. Cover, reduce the heat and simmer until the rice is tender, which takes about 10 to 15 minutes.

4. Add the turkey and tomatoes and heat until hot.
