15 Bean Soup

Ingredients -
1 (1 pound 4 ounces) package 15 Bean Soup
1 Large Onion, chopped
1 Garlic Clove, minced
2 (14.5 ounces each) cans Stewed Tomatoes
1 teaspoon Chili Powder
Coarse Salt
Fresh Ground Black Pepper, to taste
 
Preparation:

1. Pre-soak the 15 bean soup mix overnight according to package directions.

2. Drain re-hyedrated beans.

3. Add beans, chopped onion, minced garlic, stewed tomatoes, chili powder, salt and pepper to large stockpot.

4. Cover stockpot and simmer on low 4-5 hours.

5. Add water or stock to soup, if the soup gets too thick.

Storing Tomatoes
Tomatoes lose a lot of their flavor when they are stored in a refrigerator. Store in a bowl on the countertop.

When you freeze beans soups, they naturally thicken, so be prepared to add additional broth or water to the soup after thawing.
